I’m dreaming of the Virgin Islands. US, British – I love them all! And while I can’t magically transport myself there right now, I CAN whip up a signature Virgin Island cocktail or two (it’s the weekend after all).
The Painkiller is the quintessential Virgin Island cocktail. According to local lore, the Soggy Dollar Bar, located on White Bay on Jost Van Dyke, was the first to serve this tropical dream in a glass.
I’ve enjoyed my share of painkillers at the Soggy Dollar Bar. It’s my humble opinion that no trip to the Virgin Islands is complete without a trip there (and to my beloved Sandy Spit, a small cay just offshore from Jost Van Dyke).
Painkillers are a cinch to make at home. While the Soggy Dollar Bar’s recipe is a closely guarded secret, the 4-1-1 ratio works like a charm.
4 parts pineapple juice
1 part cream of coconut
1 part orange juice
Pusser’s Rum to taste (This is non-negotiable. Using a substitute brand of rum may yield unpredictable results.)
Mix all ingredients together in a shaker. Pour over ice. Top with freshly grated nutmeg. Pretend you’re floating in the water on White Bay.
I’m such a fan (obsessed isn’t too strong of a word), that I use the original cup.
